1Drop two everything bagels into a greased 9x13 baking dish, cut or tear them into small pieces.
2Shred about a cup's worth of white cheddar cheese and spread it out evenly on top of the bagels.
3Get a handful of tomatoes (about half of a 10 oz container), halve or quarter them, and spread them out.
4Thinly slice a quarter of a red onion and spread those on top as well.
5Cut half a block of cream cheese into small pieces and spread them out.
6Repeat the layers: another layer of bagels, cheese, tomatoes, onions, and cream cheese.
7In a separate bowl, whisk together eight eggs, two and a half cups of whole milk, about a tablespoon of chopped chives, some black pepper, and some salt until beautifully combined.
8Pour the egg mixture right on top of everything in the baking dish, covering it all.
9Push the mixture down to make sure it gets soaked.
10If you have coarse salt, sprinkle some on top, along with a little bit of dried garlic, dried onion, sesame seeds, and poppy seeds.
11Cover the baking dish with foil and throw it in the oven at 350 degrees Fahrenheit for 45 minutes.
12Clean up while the casserole is in the oven.
13When it comes out, carefully take the foil off.
14Put the casserole back in the oven, uncovered, for 25 more minutes.
15Once it comes out of the oven, let it cool off before serving.
