Slice the shallots thinly.

Remove the crispy shallots and place them on a tray lined with paper towels to drain excess oil.

Slice the garlic thinly.

Fry the sliced garlic in the same oil until golden and crispy.

Remove the crispy garlic and place it on a tray lined with paper towels to drain excess oil.

Add peanuts to a bowl.

Fry the peanuts in the same oil until golden brown.

Remove the crispy peanuts and place them on a tray lined with paper towels to drain excess oil.

Add ginger, cinnamon stick, coriander seeds, and a bay leaf to the oil.

Steep the ingredients in the oil off the heat to infuse flavor.

In a bowl, combine chili flakes, cumin, sugar, and sesame seeds.

Add a small amount of oil to the spice mixture.

Pour the hot infused oil over the spice mixture.

Stir the mixture well to combine.

Add the crispy shallots, garlic, and peanuts to the chili oil mixture.

Mix everything thoroughly.
