Chicken Caesar Pasta with Bacon

Directions

  1. 1Chop about half a pot of bacon and cook on low heat in a large skillet.
  2. 2While bacon is cooking, trim and thinly slice two large chicken breasts, aiming for three slices per breast.
  3. 3Season chicken slices with pepper, Italian seasoning, and garlic powder.
  4. 4Prepare two separate bowls: one with Italian style bread crumbs and the other with about a cup of Caesar dressing.
  5. 5Dip each piece of chicken first in the Caesar dressing, then in the bread crumb mixture, ensuring a nice thin layer.
  6. 6Set the breaded chicken aside until the bacon is cooked to your desired crispiness.
  7. 7Remove the cooked bacon from the skillet and add the chicken to the same skillet.
  8. 8Cook chicken for about 3 minutes on each side; if thicker, cook for 4 minutes per side.
  9. 9If there isn't enough bacon grease for the second batch of chicken, add a little oil to the pan and cook the remaining chicken.
  10. 10Clean up the pan a little, then add a few tablespoons of butter and some minced garlic to the skillet.
  11. 11Once the garlic is fragrant, add 1 pound of pasta and toss it up.
  12. 12Pour in one carton of reduced sodium chicken broth and boil for about 8 to 10 minutes.
  13. 13Thinly slice the cooked chicken.
  14. 14Once the broth has been absorbed and the noodles are al dente, turn off the heat.
  15. 15Add about half a cup of heavy cream and around half a cup of Caesar dressing to the pasta.
  16. 16Toss the pasta mixture and add about a cup of freshly shredded Parmesan cheese.
  17. 17If desired, add a little more heavy cream for a creamier consistency.
  18. 18Top the finished pasta with the cooked bacon and sliced chicken.
  19. 19Garnish with a little more freshly shredded Parmesan cheese.
