Mongolian Ground Beef and Noodles Skillet

Directions

  1. 1Cook noodles in salted boiling water until al dente, 9 to 10 minutes.
  2. 2Reserve 1/2 cup pasta water, then drain.
  3. 3In a small bowl whisk soy sauce, broth, brown sugar, hoisin, cornstarch, sesame oil, red pepper flakes, and black pepper until smooth.
  4. 4Set a large skillet over medium high heat.
  5. 5Add oil and ground beef.
  6. 6Cook 5 to 7 minutes, breaking it up, until browned.
  7. 7Drain extra grease if needed.
  8. 8Add garlic, ginger, and most of the green onions.
  9. 9Cook about 30 seconds until fragrant.
  10. 10Stir the sauce, then pour it into the skillet.
  11. 11Bring to a simmer 2 to 3 minutes until it thickens and coats the beef.
  12. 12Add cooked noodles and toss with tongs until everything is coated and glossy.
  13. 13If it seems too thick, add a splash of pasta water.
  14. 14Let sit off the heat 2 to 3 minutes so the sauce clings to the noodles.
  15. 15Top with remaining green onions and serve hot.

  • 3 green onions, sliced, divided
  • 0.5 cup low sodium soy sauce
  • 0.33 cup beef broth or water
  • 0.33 cup brown sugar, packed
  • 1 tbsp hoisin sauce (optional but good)
  • 1 tbsp cornstarch
  • 1 tsp sesame oil (optional)
  • 0.5 tsp crushed red pepper flakes (optional)
  • 0.25 tsp black pepper
