Creamy Chicken Gnocchi Soup

Directions

  1. 1Generously season chicken breasts with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil.
  2. 2Finely dice a large shallot.
  3. 3Crush and roughly chop some garlic.
  4. 4In a heavy-bottomed pot over medium-high heat, add a generous amount of olive oil.
  5. 5Carefully lay in the seasoned chicken and cook until fully done, then remove and either chop or shred.
  6. 6Add a little more olive oil to the pot, then add the diced garlic and shallots.
  7. 7Squeeze in some tomato paste and mix.
  8. 8Add sun-dried tomatoes and cook for a few minutes.
  9. 9Pour in a whole lot of chicken stock and stir.
  10. 10After about 15 minutes, add heavy cream.
  11. 11Grate a good amount of Parmigiano-Reggiano cheese into the pot.
  12. 12Let the mixture simmer to thicken up.
  13. 13After about 20 minutes, salt to taste.
  14. 14Add cold butter, the cooked chicken, gnocchi, and a handful of spinach.
  15. 15Cover and let it cook for 5 minutes.
