2In a bowl, marinate the beef with cornstarch, baking soda, neutral oil, and soy sauce.
3Chop the garlic and cut the gai lan into smaller pieces separating the greens from the stems.
4Add white pepper and garlic powder to the marinated beef.
5Prepare the sauce by mixing soy sauce, dark soy sauce, fish sauce, oyster sauce, vinegar, sugar, chicken bouillon powder, and white pepper.
6In a hot wok with oil, add the marinated beef and spread it into a flat layer. Sauté aggressively and leave to cook for about 30 seconds. Remove to a clean plate.
7Add the gai lan stems to the wok and leave them to get a nice char.
8Add garlic and sauté until fragrant.
9Add the rice noodles and pour the sauce over them. Sauté aggressively.
10Push noodles to the side, crack in two eggs, and scramble.
11Toss the eggs with the noodles, add back the beef, and finally the gai lan leaves. Let it combine for about a minute.
12Finish with a drizzle of sesame oil and green onions.
