Homemade Arby's Curly Fries

Directions

  1. 1Use a spiralizer with a curly fry attachment to make curly fries from 3 russet potatoes. Leave the skin on.
  2. 2Cover the fries with 2.5 quarts of warm water and 2.5 tablespoons of kosher salt. Let them soak for 30 minutes.
  3. 3In a separate bowl combine 0.5 cup of all-purpose flour, 2 teaspoons kosher salt, 2 tablespoons smoked paprika, 2 tablespoons ancho powder, 0.5 teaspoon cayenne pepper, and 0.5 tablespoon garlic powder.
  4. 4Carefully whisk in 1 cup of water until you get a loose batter.
  5. 5Fill a heavy bottom pot a little over halfway with frying oil and heat to 350°F (175°C).
  6. 6Remove the soaked fries and cut them into manageable pieces.
  7. 7Shake off excess water and place the fries in the batter, toss to coat evenly.
  8. 8Carefully fry a small batch of fries at a time for 4-5 minutes until crispy and golden red.
  9. 9Lightly season the fried fries with salt and optionally, add a little aleppo pepper.
  10. 10Let the fries cool.
  11. 11Make a dipping sauce by combining 0.25 cup mayonnaise, 0.5 of a small grated black winter truffle, 2 cloves of grated fresh garlic, 1 small bunch of finely chopped chives, a splash of fish sauce, and black pepper to taste.
