Roast two heads of garlic.

Peel and dice your potatoes.

Bring potatoes to a boil in salted water.

Let the boiled potatoes dry in a colander.

Cut the potatoes in half to remove more moisture.

Rice the potatoes and roasted garlic directly into a pot over medium-low heat.

Add butter, cheese, salt, and pepper to the pot and stir until the potatoes form a smooth dough-like consistency.

Add the egg yolks and stir again until a smooth dough forms.

Let the potato mixture cool for a few minutes.

Pipe the mixture into swirls onto a baking sheet.

Dab the swirls with some melted butter.

Bake them at 400 degrees Fahrenheit for about 20 minutes until the edges are crispy and golden brown.
