Garlic Butter Sweet Potato Stacks

Directions

  1. 1Peel the sweet potatoes.
  2. 2Slice off the ends of the sweet potatoes.
  3. 3Slice the sweet potatoes into very thin discs.
  4. 4Brush the muffin tin with melted butter.
  5. 5In a bowl, combine melted butter, rosemary, garlic, salt, and pepper.
  6. 6Toss the sweet potato slices in the butter and seasoning mixture.
  7. 7Stack the sweet potato slices in the muffin tin.
  8. 8Add Parmesan cheese to the sweet potato slices and toss to coat.
  9. 9Stack the sweet potato slices coated with Parmesan cheese into the muffin tin.
  10. 10Cover the muffin tin with foil and bake.
  11. 11Remove the foil and bake again until buttery soft and slightly crispy.
