Directions
- 1Dice up 3 lbs of potatoes.
- 2Spray the diced potatoes with olive oil.
- 3Season potatoes with salt, garlic powder, and Italian seasoning.
- 4Mix the potatoes well.
- 5Throw the potatoes in the air fryer at 400°F for 20 minutes or until golden brown.
- 6In a large pan, add 3 lbs of 96/4 ground beef.
- 7Season the ground beef with salt, black pepper, garlic powder, and Italian seasoning.
- 8Break up the ground beef as it cooks.
- 9Add three diced bell peppers and one diced onion to the ground beef.
- 10Cover the pan and let the mixture cook.
- 11Once the ground beef is done cooking, add one block of reduced fat cream cheese and two cups of part-skim mozzarella cheese.
- 12As the cheese melts, start to mix it in until well combined.
- 13Once the cheese is melted and everything is well combined, let it cool off until the potatoes are done.
- 14Once the potatoes are done, divide them evenly amongst your meal prep containers.
- 15Evenly distribute the beef mixture right on top of the potatoes.
