Cover the bowl with cling film and let it sit in the brine for at least two hours.

Prepare the coating by adding plain flour, baking powder, scotch bonnet powder, white pepper, oregano, salt, and chicken seasoning to a glass dish.

Once the chicken has sat in the brine, coat it in the flour mixture by scrunching and pressing it in properly.

Heat oil in a pot and season it with scotch bonnet.

Carefully place the coated chicken into the hot oil, ensuring not to overcrowd the pot.

Fry the chicken for about 15 to 18 minutes until fully cooked and crispy.

Tips
