Hot & Spicy Fried Chicken

Directions

  1. 1Break the chicken legs in half.
  2. 2Wash and clean the chicken with lemon, lime, and vinegar.
  3. 3Remove any excess fat from the chicken.
  4. 4Add green seasoning, chicken seasoning, oregano, rock salt, hot pepper, and water to the chicken.
  5. 5Stir the chicken with the seasonings to ensure everything is well combined.
  6. 6Cover the bowl with cling film and let it sit in the brine for at least two hours.
  7. 7Prepare the coating by adding plain flour, baking powder, scotch bonnet powder, white pepper, oregano, salt, and chicken seasoning to a glass dish.
  8. 8Once the chicken has sat in the brine, coat it in the flour mixture by scrunching and pressing it in properly.
  9. 9Heat oil in a pot and season it with scotch bonnet.
  10. 10Carefully place the coated chicken into the hot oil, ensuring not to overcrowd the pot.
  11. 11Fry the chicken for about 15 to 18 minutes until fully cooked and crispy.
  12. 12Remove the fried chicken from the oil and place it on a rack to drain excess oil.

Tips

  • Let the chicken sit in the brine for at least two hours for a massive difference in taste.
  • When coating the chicken in flour, scrunch it in and press it in properly.
  • Do not over-crowd your pan when frying. If using a Dutchie, fry about three pieces at a time.
