Directions

  1. 1Roast the pumpkin seeds (pepita) in a pan.
  2. 2Remove the roasted pepita into a bowl.
  3. 3Roast the pumpkin seeds in the pan.
  4. 4Remove the roasted pumpkin seeds into a bowl.
  5. 5Cut the top of the habanero peppers and add them to the pan.
  6. 6Add the tomatoes and garlic to the pan and roast them.
  7. 7Chop the cilantro.
  8. 8Cut the orange and limes in half.
  9. 9Extract the juice from the orange and limes.
  10. 10Peel the roasted garlic.
  11. 11Remove the skin from the tomatoes.
  12. 12Grind the roasted pepita in a mortar and pestle.
  13. 13Remove the ground pepita into a bowl.
  14. 14Grind the roasted pumpkin seeds in the mortar and pestle.
  15. 15Remove the ground pumpkin seeds into a bowl.
  16. 16Add the roasted habanero and peeled garlic to the mortar.
  17. 17Add water and salt to the mortar.
  18. 18Grind the garlic and habanero with water and salt.
  19. 19Add the roasted tomatoes to the mortar and grind.
  20. 20Add the ground pepita to the mortar and mix.
  21. 21Add the ground pumpkin seeds to the mortar and mix.
  22. 22Add the orange and lime juice to the mortar.
  23. 23Add the chopped cilantro to the mortar.
  24. 24Mix all ingredients in the mortar.
  25. 25Add a pinch of salt and mix.
  26. 26Serve the Sikil P'ak with tortilla chips.

Tips

  • The heat comes from habanero, but it is gentle and always adjustable because like I always say, make it your own.
  • Serve it with duras, chips, crudit e, grilled meats, tacos, whatever's around. It adds richness and depth without trying too hard.
