Peel and chop the onions.

Add the chopped onions, carrots, and leeks to the pot.

Place the pork joint in the pot.

Pour water and stock into the pot.

Cover the pot and slow cook the meat.

Serve with mashed potatoes and gravy.

Put the leftover sliced pork in the freezer.

Use the remaining meat with gravy to make sandwiches.

Use the chunky bits of meat to make a pasta sauce.

Mix the remaining scraps of meat with mayonnaise to make sandwich filling.
