Clean the inside of the whole chicken and then wash it thoroughly with salt and lime.
In a bowl, mix oregano, garlic powder, onion powder, ginger powder, sweet paprika, green seasoning, all-purpose seasoning, and softened butter to create the spice blend.
Massage the mixed spice blend into the chicken, ensuring it is well-seasoned inside and out, including under the skin.
Place the seasoned chicken upright on a roasting stand in a pan.
Preheat the oven to 375 degrees Fahrenheit and roast the chicken for 1 hour and 45 minutes.
While the chicken is roasting, prepare the garlic sauce by combining garlic paste, ketchup, honey, vinegar, ginger paste, and chicken stock in a bowl.
Whisk the garlic sauce ingredients together until well combined.
Melt butter in a pot on low heat and then add the garlic sauce mixture.
Allow the garlic sauce to simmer for 15 minutes on low heat until it reaches the desired consistency.
After 1 hour and 40 minutes, remove the chicken from the oven.
Glaze the roasted chicken with the prepared garlic sauce using a basting brush.
Return the glazed chicken to the oven for an additional 5 minutes to set the glaze.
Once finished, remove the chicken from the oven and it's ready to be served.
Cut a wing off the chicken to demonstrate its tenderness and juiciness.
