  1. 1Hit boneless, skinless chicken thighs with the best olive oil you got.
  2. 2Add a healthy spoonful of Greek yogurt.
  3. 3Add fresh garlic, smashed into a paste.

  6. 6Season with salt, pepper, and a little cumin.
  7. 7Zest down a lemon, then introduce all its juice.
  8. 8Toss on a glove and give this a really nice mix.
  9. 9Marinate the chicken until you lose patience.
  10. 10Shave your cucumber like this for the tzatziki.
  11. 11Give the cucumber a quick grate.
  12. 12Squeeze out all the juice from the grated cucumber.
  13. 13Add the cucumber to full-fat Greek yogurt.
  14. 14Add fresh chopped dill, more good olive oil, and enough garlic.
  15. 15Finish the tzatziki with lemon juice, a healthy sprinkle of salt and pepper.
  16. 16To cook the chicken, use a medium-hot oven-safe pan.
  17. 17Make a layer of chicken in the pan.
  18. 18Throw the hot pan into the oven at 375 degrees.
  19. 19Cook chicken for about 25 minutes, broiling on the last five.
  20. 20Once chopped, throw the chicken back into those beautiful pan drippings.
