Directions
1
Take the Costco rotisserie chicken out of the bag.
2
Remove the chicken’s legs.
3
Take off all the chicken meat.
4
Save the bones to make some stock.
5
Add the bones to a stock pot.
6
Fill it up with water until it covers the chicken.
7
Add bay leaves, oregano, black peppercorns, and garlic.
8
Bring the water to a boil and then simmer for about three hours.
9
Take out all the bones.
10
Add the jalapenos and ginger to a blender.
11
Blanch a whole bag of spinach and quickly dip it in there and take it out when it’s a little limp.
12
Add the spinach to your blender and blend it up.
13
Add your mixture to your broth.
14
Grab a handful of parsley and cilantro and cut the stems off, then stuff it in the blender again and add some garlic and basil leaf.
15
Blend it all up and add it to your stock.
16
Add in some leftover rice and some chicken meat that we took off in the beginning.
17
Mix it all up and add some salt and pepper to your liking, and you’re done.
