1Start by slow roasting 6 small sweet potatoes at 350°F for 75 minutes.
2Cook 1 lb lean ground beef (93/7) in 1 tsp olive or avocado oil.
3Season the beef with salt, pepper, 1 tbsp chipotle powder, 1 tbsp garlic powder, 1 tbsp oregano or thyme, and 1 tbsp sweet paprika.
4Mince the beef down with a spatula so it is in small, browned, and almost crispy pieces.
5When sweet potatoes are done, let them cool for a minute or two, then cut them down the middle.
6Mash the insides of the sweet potatoes with a fork.
7Fill each sweet potato with 4 oz of cooked beef.
8Add 2-3 avocado slices.
9Top with finely diced red onion.
10Add a handful of chopped cilantro.
11For the sauce, mix 2 tbsp mayonnaise with ¼ cup sriracha, 2 tbsp rice vinegar, ½ tsp soy sauce, 2 tsp powdered monk fruit sweetener, the juice of 1 lime, and 1 grated garlic clove.
12Add 1 thinly sliced scallion or a handful of chopped cilantro to the sauce.
13Season the sauce with salt and pepper, mix it up, taste, and adjust as desired.
14Drizzle the creamy sriracha sauce all over the sweet potato.
15Top with any other desired veggies, some chili flakes, and sesame seeds.

You can substitute spaghetti squash, eggplant, or zucchini if watching carbs.
