3Shred 4 oz of Gruyere and 4 oz of Parmesan (or 8 oz of one cheese).
4Drain liquid from 12 oz of artichoke hearts and chop them up.
5Cut 6-8 slabs of bacon into bite-sized pieces.
6In a pot pan over medium-high heat, add the bacon and cook until all fat is rendered out and it's crispy.
7Remove crispy bacon and place it in the bowl with the cheese.
8Add shallots and chopped artichokes to the bacon grease and let them get some color.
9Add 16 oz of spinach and cook down until it disappears.
10Turn off the heat once spinach is cooked down.
11Add chives, one bulb of roasted garlic, 8 oz of cream cheese, half a cup of sour cream, half a cup of mayonnaise, pepper, salt, basil, and onion powder to the bowl with cheese and bacon.
12Mix these ingredients before adding the spinach.
13Add the cooked spinach to the bowl and fold everything together.
14Put the mixture into a baking dish.
15Bake in the oven at 375 degrees for about 15 to 20 minutes.
