Render the pancetta over low heat, no oil needed.

Add butter and soffritto (onion, carrot, celery), cook for 10 minutes until soft.

Brown the meat, seasoning with salt & pepper.

Deglaze with white wine, stir, and let it simmer until fully evaporated.

Stir in the tomato paste and cook for 2 minutes to deepen the flavor.

Add passata (puréed, strained uncooked tomatoes), warm beef stock, bay leaves, and a pinch of nutmeg. Stir well.

Simmer on very low heat for 2 hours, stirring occasionally.

Stir in warm milk and cook for another 30 minutes.

Bring everything together in a large frying pan, tossing with cooked tagliatelle and pasta water to make it silky.

Serve with freshly grated Parmigiano Reggiano.
