Creamy Pesto Chicken Pasta

Directions

  1. 1Grab three chicken breasts, slice them thin, and then cut them into small cubes.
  2. 2Season the chicken well with rotisserie chicken seasoning and garlic and herb seasoning.
  3. 3Add a couple tablespoons of corn starch to the seasoned chicken and mix it up.
  4. 4Add a little bit of oil and about three tablespoons of butter to your skillet.
  5. 5Once the skillet is hot, add your chicken and cook it for about six minutes total, flipping halfway through.
  6. 6Once the chicken is golden, put it in a separate bowl and set it aside.
  7. 7Add a few tablespoons of butter to the skillet.
  8. 8Once the butter is melted, add a diced onion and cook until translucent.
  9. 9Add about 16 oz of mushrooms to the skillet; add more butter if needed.
  10. 10Towards the end of cooking the mushrooms, add a few tablespoons of minced garlic and some more seasoning.
  11. 11Once the vegetables are cooked to your desired doneness, add 1 lb of pasta and one carton of chicken broth.
  12. 12Once it starts boiling, cook for about 8 minutes until the noodles are cooked through and all the liquid has been absorbed.
  13. 13Turn the heat to low and add a half of a cup of heavy cream and a half of a cup of shredded parmesan cheese.
  14. 14Mix until everything is melted.
  15. 15Add three heaping tablespoons of pesto (optional) and then add your cooked chicken.

Tips

  • You can pick any kind of seasonings that you like for the chicken.
  • Add more butter if the mushrooms are getting dry.
  • Pesto is optional and can be added if you like it a lot.
