Cook the tomatillos in water until they are tender.

Remove the seeds from the dried guajillo chiles.

Chop the onion.

Add the oil, onion, and garlic to a pot.

Cook until the garlic is golden brown and the onions are tender.

Add the chiles and toast until fragrant and starting to take on color.

Steam the tomatillos until they are super tender.

Add the onion, garlic, chiles, salt, tomatillos and some tomatillo water to the blender.

Blend until smooth.

Add more tomatillos and water, blending as needed to reach desired consistency.

Add a pinch of sugar to round it out and mix.

0 handful chile pequin chilies
6 unit garlic cloves
0.5 unit onion
0 splash oil
0 pinch salt
0 pinch sugar

Tips
Cook the tomatillos until tender.
Remove the seeds from the dried chiles to reduce the heat.
Toast the garlic, onion and chiles until fragrant and starting to take on color.
Add a pinch of sugar to the finished salsa to round out the flavor.
