Salsa Cremosa Roja

Directions

  1. 1Cook the tomatillos in water until they are tender.
  2. 2Remove the seeds from the dried guajillo chiles.
  3. 3Chop the onion.
  4. 4Add the oil, onion, and garlic to a pot.
  5. 5Cook until the garlic is golden brown and the onions are tender.
  6. 6Add the chiles and toast until fragrant and starting to take on color.
  7. 7Steam the tomatillos until they are super tender.
  8. 8Add the onion, garlic, chiles, salt, tomatillos and some tomatillo water to the blender.
  9. 9Blend until smooth.
  10. 10Add more tomatillos and water, blending as needed to reach desired consistency.
  11. 11Add a pinch of sugar to round it out and mix.

  • 2 unit dried guajillo chiles
  • 0 handful chile pequin chilies
  • 6 unit garlic cloves
  • 0.5 unit onion
  • 0 splash oil
  • 0 pinch salt
  • 0 pinch sugar

Tips
