Remove the thick green skin from the watermelon peel.

Cut the watermelon rind into small cubes.

Add ginger garlic paste, turmeric powder, salt, red chilli powder and curd to the watermelon cubes.

Mix well and set aside.

Add oil to a pan.

Add peanuts to the oil.

Fry the peanuts on medium-low heat until golden brown. Remove from the pan and set aside.

Add mustard seeds and cumin seeds to the pan.

Add dry red chilli and garlic.

Saute for 30 seconds.

Add onion and saute until the onion turns translucent.

Add curry leaves.

Add coriander powder, red chilli powder and salt.

Saute on low heat for a minute.

Add tomato and cook until the tomato softens, 3-4 mins.

Add the marinated watermelon rind. Mix well.

Cover and cook on medium heat for 15 mins.

Add water.

Bring to a boil and simmer for 5 mins.

Add the fried peanuts.

Add garam masala powder and coriander leaves.

0.5 tsp Coriander Powder
0.5 tsp Red Chilli Powder
0.5 tsp Salt
0.5 Cup Tomato (finely chopped)
0.5 Cup Water
0.5 tsp Garam Masala Powder
3 tbsp Coriander Leaves (finely chopped)
