Watermelon Peel Curry

Directions

  1. 1Remove the thick green skin from the watermelon peel.
  2. 2Cut the watermelon rind into small cubes.
  3. 3Add ginger garlic paste, turmeric powder, salt, red chilli powder and curd to the watermelon cubes.
  4. 4Mix well and set aside.
  5. 5Add oil to a pan.
  6. 6Add peanuts to the oil.
  7. 7Fry the peanuts on medium-low heat until golden brown. Remove from the pan and set aside.
  8. 8Add mustard seeds and cumin seeds to the pan.
  9. 9Add dry red chilli and garlic.
  10. 10Saute for 30 seconds.
  11. 11Add onion and saute until the onion turns translucent.
  12. 12Add curry leaves.
  13. 13Add coriander powder, red chilli powder and salt.
  14. 14Saute on low heat for a minute.
  15. 15Add tomato and cook until the tomato softens, 3-4 mins.
  16. 16Add the marinated watermelon rind. Mix well.
  17. 17Cover and cook on medium heat for 15 mins.
  18. 18Add water.
  19. 19Bring to a boil and simmer for 5 mins.
  20. 20Add the fried peanuts.
  21. 21Add garam masala powder and coriander leaves.

  • 0.5 tsp Red Chilli Powder
  • 0.5 tsp Salt
  • 0.5 Cup Tomato (finely chopped)
  • 0.5 Cup Water
  • 0.5 tsp Garam Masala Powder
  • 3 tbsp Coriander Leaves (finely chopped)
