Turkey or Chicken Brine

Directions

  1. 1In about 3 liters of water, add 2 cups of salt, 2 cups of apple cider vinegar, Worcestershire sauce, peppercorns, a ton of garlic, oranges, lemons, Green Goddess herbs, and bay leaves.
  2. 2Stir the mixture and bring it to a boil for about 10 minutes to allow the flavors to build and settle.
  3. 3Pour the hot brine into a large non-reactive container.
  4. 4Add the rest of the cold water and a bunch of ice to cool down the brine completely.
  5. 5Submerge your chicken or turkey in the cooled brine.
  6. 6Let the chicken or turkey brine overnight in the refrigerator.
  7. 7Season the brined chicken or turkey gracefully.
  8. 8Cook the chicken or turkey as desired.
