Chicken Hibachi Meal Prep

Directions

  1. 1Chop the boneless skinless chicken thighs.
  2. 2Place the chopped chicken into a glass bowl.
  3. 3Add sesame oil, salt, paprika, garlic powder, and black pepper to the chicken.
  4. 4Mix the chicken and spices together.
  5. 5Spread the seasoned chicken on a baking sheet lined with parchment paper.
  6. 6Air fry the chicken for about 20 minutes at 400 degrees Fahrenheit.
  7. 7While the chicken is air frying, chop up the zucchini.
  8. 8Sauté the chopped zucchini on a medium heat pan with olive oil, salt, and black pepper.
  9. 9Once cooked, set the zucchini aside on a plate.
  10. 10Take the cooked chicken out of the air fryer.
  11. 11On a medium heat pan, heat up frozen peas and carrots with olive oil.
  12. 12Add a large egg, egg whites/beaters, salt, black pepper, and garlic paste to the peas and carrots.
  13. 13Scramble the eggs and vegetables.
  14. 14Add cooked jasmine rice to the pan.
  15. 15Add soy sauce, sesame oil, sriracha or chili paste, oyster sauce, and salt to the rice.
  16. 16Mix everything together to make fried rice.
  17. 17Assemble the meal prep by adding zucchini, chicken, and fried rice into meal prep containers.
  18. 18Drizzle with yum yum sauce.

  • 2 tbsp sweet chili
  • 0.5 tsp rice vinegar
  • 2 tbsp water
  • 1 tsp sriracha
