One Pot Chicken Gnocchi Soup

Directions

  1. 1Generously season chicken with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil.
  2. 2Finally dice a large shallot (onion) and crush and roughly chop some garlic.
  3. 3Add a generous amount of olive oil to a large saucepan and carefully lay in the seasoned chicken.
  4. 4Cook the chicken until fully cooked, then remove it and either chop or shred it.
  5. 5Add a little more olive oil to the same saucepan, then add the garlic and shallots (onion).
  6. 6Squeeze in a little bit of tomato paste (tomato puree) and add in a little bit of sun-dried tomatoes.
  7. 7Add a whole lot of chicken stock and simmer for about 15 minutes.
  8. 8After about 15 minutes, add in heavy cream (or yogurt as a substitute) and a good amount of grated Parmesan cheese.
  9. 9After about 20 more minutes of simmering, add cold butter (not mentioned in description, only audio), the cooked chicken, gnocchi, and a handful of spinach.
  10. 10Cover and let it cook for five more minutes.

  • 4 chopped garlic gloves
  • 20 ml olive oil
  • 3 tbsp tomato puree
  • 6 chopped sun dried tomatoes
  • 1 L chicken stock
  • 500 g natural yogurt
  • 50 g grated Parmesan
  • 400 g gnocchi
  • 1 handful spinach

Tips

  • Season chicken generously; if you can still see chicken, add more seasoning.
  • For a revised version, yogurt can be used instead of heavy cream.
