Creamy Garlic Parmesan Orzo

Directions

  1. 1Dice half of a yellow onion.
  2. 2Peel and slice three cloves of garlic.
  3. 3Turn the heat on the pan to medium-low.
  4. 4Add olive oil to the pan.
  5. 5Add the diced onions to the pan and let them cook for 30 seconds.
  6. 6Add the sliced garlic to the pan and let it sauté for a while.
  7. 7Add 2 tablespoons of butter to the pan.
  8. 8Let it simmer for about a minute and a half.
  9. 9Add some pepper and salt.
  10. 10Add half a cup of orzo to the pan.
  11. 11Sauté the orzo without any added liquids, letting it soak up the butter, toasting it slightly.
  12. 12Pour in 1 and a quarter cup of chicken broth (or water).
  13. 13Let it cook down for 5 to 7 minutes.
  14. 14Grate 1 cup of parmesan cheese.
  15. 15Once the liquid has mostly absorbed and the orzo is cooked (no crunchy bits in the center), turn off the heat.
  16. 16Add the shredded parmesan cheese to the pan and mix it up.
  17. 17Turn the heat back on to low and cook it down slightly.
  18. 18Taste for seasoning and adjust if necessary.
  19. 19Serve the creamy garlic parmesan orzo onto a plate.
  20. 20Grate some fresh parmesan and cracked pepper on top for garnish.

Tips

  • If you don't have chicken broth, water works just fine, it literally doesn't taste any different.
