Easy Chicken Fajitas

Directions

  1. 1Cut the onion into slivers and slice the bell peppers.
  2. 2In a separate bowl, combine 1 tablespoon of olive oil, the juice of ½ lime, chili powder, paprika, onion powder, pepper, cumin, and ½ teaspoon of salt.
  3. 3Cut the chicken into strips and toss with the spice mixture to marinate.
  4. 4Preheat 1 tablespoon of olive oil over medium-high heat.
  5. 5Add half of the chicken and cook until just done, about 3 to 5 minutes.
  6. 6Remove the cooked chicken from the pan and set it aside.
  7. 7Repeat the cooking process with the remaining chicken.
  8. 8Add 1 tablespoon of oil to the pan after setting the chicken aside.
  9. 9Drain the onions well (if soaking) and cook for 2 minutes.
  10. 10Add the sliced peppers and season with the remaining ¼ teaspoon of salt.
  11. 11Toss and cook the peppers for an additional 2 minutes or until just hot.
  12. 12Add the chicken back to the pan and stir to combine.
  13. 13Squeeze additional lime over the fajitas and serve over tortillas with your favorite toppings.

  • 3 approximately 1 pound boneless skinless chicken breasts
  • 1 medium onion
  • 1 lime
  • 3 bell peppers (red, yellow, green or orange)
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • 0.75 teaspoon salt
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cumin

Tips

  • Do not overcrowd the pan with chicken for better browning.
  • Soak onions in cold water while prepping other ingredients to reduce their 'bite', especially when serving to kids.
