Easy Loaded Beef and Bean Burrito

Directions

  1. 1Finely chop a red bell pepper.
  2. 2Dice a brown onion.
  3. 3Finely chop a shallot or red onion.
  4. 4Dice fresh tomatoes, removing the watery core.
  5. 5Chop fresh coriander, including the stems.
  6. 6Mix chopped red onion, diced tomatoes, and some coriander in a bowl.
  7. 7Add chopped jalapenos to the bowl.
  8. 8Add lime juice, salt, and pepper to the bowl, then mix well.
  9. 9In a pan, sauté the diced onions with olive oil for about five minutes.
  10. 10Add crushed garlic cloves to the pan and cook for an additional minute.
  11. 11Add the beef mince to the pan and let it brown.
  12. 12Add cumin and smoked paprika to the pan, mix in and let it cook.
  13. 13Add chopped tomatoes and vegetable stock to the pan, bring to a boil, reduce heat to low, and let it simmer for about 10 minutes.
  14. 14Add tomato paste, stir, and cook until slightly thickened.
  15. 15Add black beans and mix thoroughly; heat through for a few minutes.
  16. 16Add the remaining chopped coriander to the mixture.
  17. 17Assemble the burritos: start with shredded lettuce, add the beef mixture, top with cheese, sour cream, and pico de gallo.
  18. 18Grill each side of the burrito in a pan until heated through.

  • 500 g beef mince
  • 4 fresh tomatoes
  • 1 shallots/red onion
  • 1 medium brown onion
  • 1 red bell pepper
  • 1 fresh/canned jalapeno
  • 1 lemon/lime
  • 4 garlic cloves
  • 1 chilli powder
  • 1 can canned chopped tomatoes
  • 2 tbsp tomato puree/paste
  • 1.5 tsp cumin
  • 1.5 tsp smoked paprika
  • 80 ml vegetable/beef stock
  • 1 can black beans
  • 1 handful fresh coriander
  • 1 salt
  • 1 pepper
  • 1 sour cream
  • 1 cheese
