Smoked Flank Steak

Directions

  1. 1Mix the marinade ingredients in a large container with a lid. Set aside and trim any silver skin or excess fat from the flank steak.
  2. 2Place the flank steak in the marinade, ensuring it's completely covered. Cover and refrigerate for at least 1-2 hours, but overnight is best.
  3. 3Preheat the smoker to 225°F. While it heats up, remove the flank steak from the marinade and wipe it off.
  4. 4Place the flank steak on the smoker for 40-60 minutes, or until it reaches an internal temperature of 115-120°F.
  5. 5Let the flank steak rest after removing from the smoker.
  6. 6Turn up the grill and sear the flank steak for 1 minute per side.
  7. 7Remove to rest for 2-3 more minutes.
  8. 8Slice the flank steak against the grain.

  • 3 tbsp red wine vinegar
  • 2 tbsp Worcestershire
  • 3 tbsp pickled jalapeno brine
  • 2 juice from limes
  • 2 chipotle in adodo pepper, chopped
  • 0.5 tbsp garlic powder
  • salt
  • pepper
  • 1 Flank Steak

Tips

  • Marinate for at least an hour, but the longer, the better.
  • Pat the flank steak completely dry before smoking for better smoke penetration and to prevent sogginess.
  • Sear for about a minute per side to form a crust and char.
  • Slice against the grain.
