Directions

  1. 1Cut five ears of corn off the cob, slicing a little thin layer at a time all the way around the cob for the first layer.
  2. 2Go around the cob again, cutting a second layer, and then take your knife down the cob to milk the corn and get all the good milk out.
  3. 3Put 4 tablespoons of butter in a cast iron skillet, turn up the heat, and let it start to melt.
  4. 4Pour all the cut corn into the skillet and let it cook for about 3 minutes.
  5. 5Add salt and pepper to the corn.
  6. 6Add about a heaping tablespoon of flour to the corn and stir it around, letting it cook for about 2 minutes to avoid a raw flour taste.
  7. 7Add half a cup of heavy whipping cream to the corn and mix it up well.
  8. 8Add half a cup of warm water to the mixture and mix it again.
  9. 9Let the mixture cook down for a few minutes until it thickens and is ready to serve.

Tips

  • When cutting corn off the cob, slice a thin layer around the cob first, then go around again to cut a second layer to get all the good milk out of it, which makes the cream corn much better and creamy.
