Directions
- 1Break the chocolate into pieces and place them in a bowl.
- 2Melt the butter in a pan over medium-low heat.
- 3Continue stirring until the milk solids turn golden brown.
- 4Pour the hot brown butter over the chocolate pieces.
- 5Stir until the chocolate and butter are melted and smooth.
- 6Add granulated sugar, dark brown sugar, cocoa powder, and eggs to a separate bowl.
- 7Add coffee to the bowl with the other ingredients.
- 8Beat the mixture vigorously for 2-3 minutes until thick and glossy.
- 9Pour the melted chocolate-butter mixture into the sugar-egg mixture.
- 10Mix until smooth.
- 11Sift the flour into the mixture.
- 12Fold in the flour and salt until no dry streaks remain.
- 13Pour the batter into a pan lined with parchment paper.
- 14Spread half of the batter evenly into the prepared pan.
- 15Add chocolate chunks on top of the batter.
- 16Pour the remaining batter over the chocolate chunks.
- 17Spread the batter evenly.
- 18Bake the brownies until the top is shiny and set but the center still feels slightly soft.

- 170 g semi-sweet or dark chocolate chips
- 200 g granulated sugar
- 100 g dark brown sugar, lightly packed
- 60 g Dutch-process cocoa powder
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 60 g all-purpose flour
- 0.5 tsp fine sea salt
- 1 to 2 tsp Nescafé coffee granules
- 1 to 2 tbsp hot water
- Optional flaky sea salt for topping
- 0.5 to 0.75 cup chocolate chunks to fold in

Tips
