Directions

  1. 1Simmer sweet potatoes super gently in heavy cream until they're fork tender.
  2. 2Temper some eggs and throw them in to thicken the potatoes a little bit.
  3. 3Blend all together with butter and cheddar cheese.
  4. 4Pour the sauce over pasta.
  5. 5Add breadcrumbs and arugula on top of the dish.

Tips

  • The sauce can be frozen or refrigerated for later use and it won't break when heating it up.
