Directions

  1. 1Wash the lemons well and peel the skin.
  2. 2Add the lemon peels into a jar with the everclear.
  3. 3Store in a cool dark place and shake periodically for 25 days.
  4. 4Combine sugar and water in a pot, bring to a boil, and reduce to a simmer to melt the sugar. Cut the heat and let it cool.
  5. 5After 25 days, strain the mixture through a cheesecloth.
  6. 6Marry the alcohol-soaked skins with the simple syrup and place in the freezer until well-chilled.

Ingredients

  • 8-9 whole organic lemon
  • 750 ml everclear
  • 2 1/2 cup sugar
  • 4 cup cold water

Tips

  • You can use vodka instead of everclear.
  • Don't throw away the used lemon peels; dehydrate them to use in baked goods, dressings, tea, body scrubs, or spice rubs.
  • Use the freshly squeezed lemon juice combined with simple syrup and water to make Italian lemon ice push pops or lemonade.
  • Put lemon rinds in the garbage disposal to help it smell nice, but do not overload it.
