1Combine butter, light brown sugar, and honey in a pan and heat until melted and combined.
2Stir in the flour, salt, and vanilla extract until smooth.
3Bake the cookie mixture in thin circles until golden.
4Remove from oven and shape into shells while still warm and flexible; if they harden too quickly, return to the oven for a few seconds to make them pliable again.
5Prepare the filling by mixing the drained ricotta, powdered sugar, vanilla, orange zest, and mini chocolate chips.
6Pipe the filling into the cooled shells and dip the ends in mini chocolate chips or finely chopped pistachios.
Ingredients
4 tbsp unsalted butter
0.25 cup light brown sugar
3 tbsp honey
0.25 cup all-purpose flour
0.25 tsp salt
0.5 tsp vanilla extract
2 cup ricotta, drained
1 cup powdered sugar
1 tsp vanilla
1 tsp orange zest
0.5 cup mini chocolate chips
for garnish mini chocolate chips (optional)
for garnish pistachios, finely chopped (optional)
Tips
If shells start to harden up too quickly during shaping, pop them back in the oven for a few seconds to make them pliable again.
Drain ricotta thoroughly to remove as much moisture as possible before making the filling.
