Directions
- 1Remove the chicken from the skin and bones, then cut it up to your desired size.
- 2Cut one tube of jumbo biscuits into six pieces each.
- 3In a large mixing bowl, add 10 ounces of red enchilada sauce, half a cup of sour cream, and a fajita seasoning mix.
- 4Whisk all together until smooth.
- 5Add the biscuit pieces and the chicken to the bowl and mix.
- 6Smooth that out into a 9x13 baking dish.
- 7Shred 8 ounces of pepper jack cheese and sprinkle it over the top.
- 8Bake uncovered for around 45 minutes in a 350° preheated oven.
