Biscoff Cookie Ice Cream Sandwiches

Directions

  1. 1Cut the prepared Biscoff Cookie Ice Cream Sandwiches into individual servings.
  2. 2Take the Biscoff cookies and toss them into a freezer bag.
  3. 3Crush the Biscoff cookies in the freezer bag, leaving some chunks for texture.
  4. 4Pour the crushed Biscoff cookies into a bowl.
  5. 5Melt some unsalted butter.
  6. 6Add the melted butter and cookie butter to the crushed cookies.
  7. 7Mix the crushed cookies, melted butter, and cookie butter together.
  8. 8Line a pan with parchment paper.
  9. 9Spread half of the cookie crumble mixture evenly in the bottom of the prepared pan.
  10. 10Spread half of the vanilla ice cream on top of the cookie crumble layer.
  11. 11Drizzle more cookie butter on top of the ice cream layer.
  12. 12Add more vanilla ice cream on top of the cookie butter drizzle.
  13. 13Spread the ice cream layer out nicely and evenly.
  14. 14Place six whole Biscoff cookies on top of the ice cream layer to define each bar.
  15. 15Sprinkle the remaining cookie crumbles in the empty spaces around the whole cookies to fill up the ice cream.
  16. 16Brush off any excess crumbles from the whole cookies for a cleaner look.
  17. 17Gently pack down the crumbles.
  18. 18Cover the pan with plastic wrap and let it sit in the freezer overnight.

Tips
