Cut chicken thighs into small pieces.

Cook rice in a rice cooker.

Sear chicken in algae oil and remove from pan.

Slice onions.

Mince ginger and garlic.

Cut potatoes and carrots into 1/2” pieces.

Cook onion, garlic, and ginger in remaining fat until browned and aromatic.

Add carrots, potatoes, and chicken stock to the pan.

Cover and simmer for 25 minutes.

Add curry roux, stir.

Add the seared chicken, soy sauce, and Worcestershire sauce.

Cover and simmer for 10 more minutes.

Add sliced scallions and stir.

Serve over white rice.
