High Protein Cheesy Garlic Chicken Rolls

Directions

  1. 1Dice the chicken breast into cubes.
  2. 2Add garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper to the diced chicken.
  3. 3Mix the seasonings well to coat the chicken.
  4. 4For the garlic sauce, mix cottage cheese, Greek yoghurt, light mayo, roasted garlic paste, lemon juice, honey, salt, black pepper, and onion powder in a blender.
  5. 5Blend the sauce mixture until completely smooth.
  6. 6Pour the blended garlic sauce into a bowl.
  7. 7Add the seasoned chicken to a pan with cooking spray.
  8. 8Cook the chicken on high heat until golden brown.
  9. 9Place the cooked chicken in a bowl.
  10. 10Pour the garlic sauce over the chicken.
  11. 11Add grated cheddar and mozzarella to the chicken and sauce mixture.
  12. 12Add chopped parsley to the mixture.
  13. 13Mix everything well to form your filling.
  14. 14On a warm tortilla, add one-eighth of the chicken mix.
  15. 15Roll up the tortilla tightly, repeating until you have eight rolls.
  16. 16Place the rolls on a baking tray lined with parchment paper.
  17. 17Give the rolls a quick spray with cooking spray.
  18. 18Sprinkle parsley over the rolls.
  19. 19Oven bake or air fry the rolls at 200°C for 8-10 minutes.

Tips

  • Store in the freezer for months, wrapped in foil.
  • To reheat, unwrap from foil, wrap in a paper towel, run under water, squeeze excess, microwave for 5-6 minutes, then air-fry or toast in a pan for a couple of minutes until crispy.
