Sticky Caramelized Pulled Beef

Directions

  1. 1Mix sugar, paprika, garlic, onion, salt, and pepper. Rub generously all over the beef roast.
  2. 2Place in a slow cooker or Dutch oven with vinegar and 1/2 cup BBQ sauce. Cook on LOW for 8-10 hours (or 325°F oven for 4-5 hrs) until fork-tender and easily shreds.
  3. 3Remove beef, discard any large fat chunks, and shred with forks. Reserve 1/2 cup of the rich cooking juices.
  4. 4Toss shredded beef in a cast-iron skillet with reserved juices, remaining BBQ sauce, and butter.
  5. 5Broil on high for 5-8 mins, stirring once, until edges are dark, sticky, and beautifully charred.
