1Start by grabbing some beef bacon, turkey bacon, or shortcut bacon and cook it in the oven with the settings on screen.
2In a bowl, add eggs and egg whites.
3Whisk the eggs and egg whites together.
4Grab some low-fat cottage cheese and blend until it's nice and smooth.
5Add the blended cottage cheese to the eggs and mix to make them higher in protein and super fluffy.
6Add some parmesan cheese, onion and garlic powder, and mix it together one more time.
7To a pan on medium heat, spray a bit of oil and add just enough egg to cover the pan.
8Let it cook for a few minutes.
9Fold the edges of the egg to the middle and flip it over to create our egg pocket.
10Once you've made eight egg pockets, toast up bagel thins or low carb bagels.
11Add a slice of egg to each bagel.
12Add cheddar cheese to each bagel.
13Add four slices of bacon to each bagel.
14Slap the lid on top and assemble the other seven bagels.
15Wrap them up.
16Store them in the freezer.
17Reheat when you're ready to eat.
Ingredients
16 slices Beef Bacon, Turkey Bacon, Centre Cut Bacon or Short Cut Bacon (or your choice of bacon - I prefer beef bacon by the brand “Fettayleh” which can be found at a butcher)
When cooking the eggs use the smallest pan you have available, if your pan is too big you might need to use more eggs to cover the entire surface of the pan.
Store all the breakfast bagels in the freezer & for the best reheating results place one in the fridge the night before you plan on consuming.
Do not microwave straight from the freezer as it’s harder to get a good texture, instead take it out the foil, wrap in a damp paper towel & microwave for 2 - 4 minutes (time may vary depending on the microwave).
