Directions

  1. 1Pat the chicken wings dry with paper towels to remove as much moisture as possible.
  2. 2Transfer the dried chicken wings to a large mixing bowl.
  3. 3Add about 1 tablespoon of aluminum-free baking powder to the chicken wings.
  4. 4Add a half teaspoon each of salt, black pepper, and paprika to the chicken wings.
  5. 5Toss the chicken wings with your hands or tongs until they are fairly evenly coated with the seasonings.
  6. 6Place a wire cooling rack onto a baking sheet.
  7. 7Arrange the seasoned chicken wings on the wire rack, ensuring they are not overcrowded.
  8. 8Slide the baking sheet with the wings into the fridge and let them sit for 12 to 24 hours.
  9. 9When ready to bake, preheat your oven to 425 degrees Fahrenheit.
  10. 10Pull the wings directly from the fridge and place them straight into the preheated oven.
  11. 11Bake the wings for about 30 to 45 minutes, until crispy and cooked to an internal temperature of 165 degrees Fahrenheit.
  12. 12Prepare the buffalo sauce by combining a quarter cup of buffalo hot wing sauce, a quarter cup of melted butter, and about a tablespoon of honey in a bowl.
  13. 13Whisk the buffalo sauce ingredients together.
  14. 14Prepare the lemon pepper sauce by combining two tablespoons of extra virgin olive oil and one tablespoon of lemon pepper seasoning in a bowl.
  15. 15Whisk the lemon pepper sauce ingredients together.
  16. 16Prepare the garlic Parmesan sauce by combining a quarter cup of melted butter, a third of a cup of grated Parmesan cheese, a half teaspoon of garlic powder, and a quarter teaspoon each of salt and black pepper.
  17. 17Whisk the garlic Parmesan sauce ingredients together.
  18. 18Remove the crispy chicken wings from the oven.
  19. 19Place a batch of cooked wings into a mixing bowl.
  20. 20Drizzle the desired sauce over the wings.
  21. 21Toss the wings to coat them evenly with the sauce.

Tips

  • Use aluminum-free baking powder for best results.
  • If short on time, use the 'cheater method' on the website.
  • Actual cooking time will vary based on chicken wing size, usually between 30 to 45 minutes.
  • Can add garlic powder or onion powder for additional flavoring.
  • You can use brown sugar instead of honey in the buffalo sauce.
  • Other sauce recipes like teriyaki, simple barbecue, honey garlic, and salt and vinegar wings are available on the website.
  • Salt and vinegar wings require brining before patting dry.
