Directions

  1. 1Season a chuck roast with salt, pepper, and Kinder's steak seasoning, ensuring all sides are seasoned.
  2. 2In a Dutch oven, heat 1 tablespoon of bacon grease or oil.
  3. 3Sear the roast until it has a nice crust on all sides.
  4. 4Remove the roast from the pan.
  5. 5Add 2 large chopped onions to the pan.
  6. 6After a few minutes, add about 5 whole garlic cloves.
  7. 7Stir in 1 tablespoon of tomato paste, a spoonful of beef flavored better than bouillon, and 3 cups of water or beef broth.
  8. 8Add some rosemary, thyme, 1.5 pounds of baby potatoes, and 1 pound of baby carrots.
  9. 9Put the roast back into the Dutch oven along with a couple of bay leaves.
  10. 10Bake at 300 degrees Fahrenheit for 3 to 4 hours or until the meat is fork tender.
  11. 11Remove the bay leaves.
  12. 12Shred the meat and put everything into a serving dish.
  13. 13Add a cornstarch slurry and 1 cup of water to the juice left in the pot.
  14. 14Stir it over medium heat until it thickens into a nice gravy.
