Directions

  1. 1Break leftover rotis into small pieces.
  2. 2For the sweet version, heat ghee in a pan.
  3. 3Add the broken roti pieces to the ghee and fry them.
  4. 4Add cloves and green cardamom to the pan with the roti pieces.
  5. 5Add sugar to the pan.
  6. 6Pour water into the pan and let it simmer until the roti pieces are softened and absorb the liquid.
  7. 7Serve the sweet tukde in a bowl, optionally topped with yogurt and almonds.
  8. 8For the savory version, heat oil in a pot.
  9. 9Add chopped onions to the pot and sauté.
  10. 10Add red chili powder and coriander powder to the onions and cook to form a masala.
  11. 11Add chana dal to the masala and mix well.
  12. 12Pour water into the pot with the dal and spices, and cook until the dal is tender.
  13. 13Add broken roti pieces to the cooked chana dal and stir to combine.
  14. 14Top the savory tukde with fried onions and fresh coriander.
  15. 15Serve the savory tukde.
