Directions

  1. 1Cut the potatoes into halves.
  2. 2Cut the sweet potatoes into pieces.
  3. 3Make an incision in the brinjal.
  4. 4Cut the purple yam (kand) into pieces.
  5. 5Add coriander to a mixer grinder.
  6. 6Add green garlic, garlic, green chilies, ginger, and turmeric to the mixer grinder.
  7. 7Add cumin seeds to the mixer grinder.
  8. 8Squeeze half a lemon into the mixer grinder.
  9. 9Add salt to the mixer grinder.
  10. 10Blend all ingredients to make a green paste.
  11. 11Transfer the green paste to a plate.
  12. 12Add crushed peanuts, crushed sesame seeds, and ajwain to the green paste.
  13. 13Pour oil over the mixture.
  14. 14Mix well to combine all ingredients.
  15. 15Stuff the brinjal with the prepared green paste.
  16. 16Stuff the potatoes with the prepared green paste.
  17. 17Coat the sweet potato pieces with the green paste.
  18. 18Mix the remaining purple yam pieces with the green paste.
  19. 19Add paapdi (beans) to the mixture and mix thoroughly.
  20. 20Line the bottom of a clay pot with fresh green leaves.
  21. 21Place the stuffed potatoes on top of the leaves in the pot.
  22. 22Add the prepared paapdi (beans), sweet potato, purple yam, and brinjal into the clay pot.
  23. 23Arrange a layer of fresh green leaves on top of the vegetables.
  24. 24Cover the clay pot with a lid.
  25. 25Seal the lid with dough to ensure no steam escapes.
  26. 26Cook the Umbadiyu on the stove.
  27. 27Remove the lid and the top layer of cooked leaves.
  28. 28Serve the Umbadiyu hot.
