London Crepes with Lemon and Sugar

Directions

  1. 1Preheat the oven to around 420 degrees.
  2. 2Poke holes in the sweet potatoes, wet them, and wrap them in tin foil.
  3. 3Put the wrapped sweet potatoes in the oven for an hour and 20 minutes.
  4. 4Combine half a cup of milk, half a cup of water, four tablespoons of melted butter, and four eggs in a bowl.
  5. 5Blend the batter until smooth (if clumpy, use a blender).
  6. 6Put the batter in the fridge for a little bit to settle.
  7. 7Warm up a pan.
  8. 8Pour the thin batter onto the hot pan to make crepes.
  9. 9Serve the crepes with a drizzle of lemon and sugar.
  10. 10Optionally, add maple syrup for dipping.
