Preheat the oven to around 420 degrees.

Poke holes in the sweet potatoes, wet them, and wrap them in tin foil.

Put the wrapped sweet potatoes in the oven for an hour and 20 minutes.

Combine half a cup of milk, half a cup of water, four tablespoons of melted butter, and four eggs in a bowl.

Blend the batter until smooth (if clumpy, use a blender).

Put the batter in the fridge for a little bit to settle.

Warm up a pan.

Pour the thin batter onto the hot pan to make crepes.

Serve the crepes with a drizzle of lemon and sugar.

Optionally, add maple syrup for dipping.

Tips
The key is to make the crepes really thin.
Eat crepes right after getting them off the pan.
