1In a large bowl, add 3 cups of all-purpose flour, 1 ½ teaspoons of salt, and ½ teaspoon of baking powder. Whisk all dry ingredients together until well combined.
2Heat up 1 cup of water and melt in 1 stick of unsalted butter.
3Slowly add the water-butter mixture to the flour, mixing until it becomes crumbly like wet sand. Add the rest of your water and continue mixing until a dough forms. Knead for about 10 minutes until smooth and not sticking to the bowl.
4Leave the dough in the bowl, cover with damp paper towels, and let it rest for 10-15 minutes.
5Lightly flour a flat surface, place your ball of dough, and cut it into 8 equal pieces.
6Form each piece into a ball, tucking the dough to the bottom until the top looks smooth.
7Cover the dough balls with damp paper towels to prevent a crust from forming.
8Roll out each dough ball into a thin circle, rotating the tortilla to roll all sides evenly. Use your hands to stretch out funky edges if needed.
9Place the tortilla on a preheated, hot comal or griddle (medium heat).
10Flip the tortilla once bubbles start forming and again when the second side starts to puff up. Use a spatula to press and help it puff up.
