Directions

  1. 1In a large bowl, add flour and salt, and whisk together.
  2. 2Add water and oil, and stir with a spoon until it starts to come together.
  3. 3Once it cools slightly, use your hands to continue to mix until a dough has formed and all of the liquid has been absorbed.
  4. 4Transfer the dough onto a work surface and knead it about 10 times until smooth.
  5. 5Divide the dough into 12 equal balls. Flatten each ball slightly, flour both sides, then set aside and cover with a tea towel.
  6. 6Heat a large nonstick frying pan over medium-high heat.
  7. 7Roll out one piece of dough into a 20cm (8-inch) circle as thinly as you can, then transfer it to the hot pan.
  8. 8Cook for 1-2 minutes until bubbles appear, then flip and cook for another minute on the other side.
  9. 9Remove from the pan, place onto a tea towel and cover it while you roll out and cook the remaining tortillas.
  10. 10Allow tortillas to cool, then load with your favourite fillings, or use as a pizza base!
