Make a ball of dough and knead it.

Wash the dough 5 to 6 times with 2-3 cups of fresh water until the water runs clear, reserving the starchy water for the noodles.

Let the protein rest covered in the fridge for a couple of hours, and let the starchy water settle.

Steam the protein for about 30 minutes and cut into small cubes.

To make the noodles, pour off the top layer of starchy water, leaving only the starchy stuff at the bottom.

Mix the starchy water with a little extra water and salt.

Steam in thin layers until you get slippery sheets, cut once cooled.

Mix up your spicy sauce.

Add the noodles, cucumber, bean sprouts, protein, and coriander to the sauce and enjoy.

1 pinch salt
1 serving noodles
1 serving cucumber
1 serving bean sprouts
1 serving sesame seeds
1 serving coriander
1 serving spicy sauce
