Directions

  1. 1Get a llanera and add sugar.
  2. 2Melt the sugar over low heat until it becomes amber in color.
  3. 3Let this cool down and harden.
  4. 4Gather 10 egg yolks, or 12 if your eggs are small.
  5. 5Don't over stir the egg yolks, use a very light hand to break the egg yolks.
  6. 6Add Jolly Cow condensed milk and stir painstainkingly until it's one with the yolk.
  7. 7Add evaporated milk and whisk slowly.
  8. 8Add a pinch of salt, and a squeeze of lemon juice, then mix in a splash of vanilla extract.
  9. 9Strain the mixture 2 to 3 times with a fine sieve to eliminate air bubbles.
  10. 10Pass the mixture to llaneras.
  11. 11Tap the llaneras on the counter, and cover them with foil.
  12. 12Steam the llaneras in low heat for 60 minutes.
  13. 13Confirm if it's cooked by inserting a toothpick, and it comes out clean, you're good to go.
  14. 14Let them cool down to room temp before putting them in the fridge for at least 2 hours.
  15. 15Remove the foil and invert on to a plate to serve.
