Peel a coconut and grate it on the thick side of the grater, reserving it.

In a bowl, add butter at room temperature, two whole eggs and sugar, and beat well.

Then add vanilla, nutmeg (optional), ground cinnamon, ginger, a pinch of salt and honey.

Beat again to integrate everything.

Add the grated coconut and incorporate the all-purpose flour in two batches, along with the baking powder.

Add a splash of evaporated milk and stir.

Add a little molasses because I love the flavor it gives it (optional).

When you have the mixture ready, take portions and place them on a tray with waxed paper, leaving space between each one.

Take to a preheated oven at 180°C for about 20 minutes or until golden brown.

Remove from the oven, let cool a little and that's it.

2 Tzas all-purpose flour
2 Cdas honey
0.25 Tza evaporated milk
1 Cda ground cinnamon Gold
1 Cdta baking powder
1 Cda fresh ginger, grated or powdered
3 Cdas butter
0.25 Cdta nutmeg Doña Elsa (optional)
1 Cda vanilla, white or black Gold
1 Tza sugar
1 Cdta molasses (optional)
0.25 Cdta refined salt Gold
